Make Ahead Lunch: Black Bean Quinoa Burgers

We are at the start of a new week and I'm excited to share another make ahead lunch recipe that we can't get enough of over here! All the ingredients are staples in our house, which means not only is it protein packed and meal-prep approved, but it's also cheap and easy! Done and Done.

I modified this recipe to kick-up the southwestern flavor and we serve on butter leaf lettuce instead of buns. I hope you enjoy!
1 (15 oz) Can Organic Black Beans, Rinsed and Drained
1/2 Cup Cooked Quinoa
1/2 Cup Bread Crumbs (I always use Italian and it actually works well)
1/3 Cup Organic Yellow, Red and Orange Bell Peppers, Cubed 
3 Tbl, Cooked Onion, Finely Diced 
2 Tbl Garlic, Minced 
1 Jumbo Organic Egg
2 1/2 Tbl. EVOO
1 1/2 Tsp. Cumin 
1/2 Tsp. Salt
1/4 Tsp. Garlic Powder
1 1/2 Tsp. Hot Sauce
1 Tsp. Wischire Sauce
Non-stick cooking spray

1. Cover a cutting board with wax paper and set aside. 
2. Add all ingredients (aside from cooking spray) to a large mixing bowl and combine with your hands. 
3. Take 1/4 cup of mix and form a patty with your hands then transfer to lined cutting board. This recipe should make about 7 - 8 patties. Once complete, transfer to fridge and let stand for 5-10 minutes.
4. While the patties are cooling, heat griddle to 375 degrees and spray with non-stick spray. Add patties to griddle, cook for 4 -5 minutes on each side, or until golden brown.
5. Make your burger! We love it on butter leaf lettuce, avocado, pickles and mayo.
1. Ingredient Cross Over: Each week I try to find recipes that have overlapping ingredients. This one is great because the quinoa, onions and bell peppers overlap with the Turkey Bowls and they can also be used to make omelets in the mornings.

2. Freeze, Freeze, Freeze: These burgers do so well frozen and reheated! If you have 20 extra minutes on a Sunday, make a batch and freeze for later in the week or a busy week when you won't have time to meal prep on the weekend!
