Gluten Free Blueberry Muffins

Hello friends! I've been stocking up on fresh fruit the last few weeks as the summer sales made it impossible not buy two containers of everything! The blueberries were especially beautiful and inspired me to make a healthy version of the classic blueberry muffins. I hope you enjoy!

Ingredients (Made modifications to the Blueberry Muffin recipe in the Joy of Cooking)
2 cups gluten-free all-purpose flour
- 2 tsp. baking powder
- 1 tsp. xanthan gum
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg

- 2 large eggs OR 3 eggs beaters 
- 1 cup 2% organic milk OR almond milk
- 2/3 cup sugar or brown sugar
- 1/4 cup vegetable oil OR 1 cup of apple sauce
- 1 tsp. vanilla
- 1 1/2 cups fresh washed blueberries


1. Preheat oven to 400 degrees and prepare muffin pan with non-stick cooking spray. Mix flour, baking powder, xanthan gum, salt, and nutmeg together in bowl. Set aside.

2. Beat eggs, milk, sugar, oil, and vanilla together in second bowl. Then stir in dry mixture and mix until everything is combined. TIP: Do not over mix muffins! There should be lumps in the mixture.

3. Fold in blueberries and fill muffin tin with mixture. I fill mine to just above 3/4 full. Bake for 15-18 minutes. I like mine golden brown so we normally bake them closer to 18-20.

Serve with a hot cup of Joe and enjoy!
