Snack IT - Cinnamon Apple Chips

I can snack with the best of them, which has taught me not to keep them in our pantry. If I had easy finger-foods readily available around the house my pants and I would have a problem. While I know this is the best thing for my waist line, it makes it hard when you just need a little something to help you make it to lunch. In a effort to find that happy medium, I've been researching organic, low-fat snacks I can purchase or make at home.  The "healthy chip" came up many times during my Google searches so I decided to try out a few recipes. This week I wanted to share the sweet option; tune in next Wednesday for the salty option!

Prep Time: 10 minutes
Bake Time: 3 Hours

- 2 Organic Apples (I used Gala), Washed and Dried
- Cinnamon 
- Parchment Paper 
- Cookie Sheet

1. Preheat the oven to 200 degrees, and line a cookie sheet with parchment paper.

2. Slice the apples thinly in a horizontal direction making a medallion shape.  Make sure to discard all seeds and cut out any hard middle sections. NOTE: The thiner you slice, the better!

3. Place the slices on the lined cookie sheet and dust with Cinnamon.  Make sure the slices are a single layer and not overlapping each other.  Bake for 1 hour, then flip to the alternate side and dust with Cinnamon before cooking for another hour. Continue this for an additional hour to hour and a half, flipping occasionally until apple slices are no longer moist (you want them to be crispy like a chip).  After the slices have cooled, store them in a air tight container.

    I just found your blog from an old link on SOML and I think we have a few things in common :). Also, I seriously have to try making these! Snacking is what kills me and I've been changing my eating and exercise habits lately. I think variety really helps, thanks for this very different recipe!
