
I'm kicking it off with classic Cucumber Salad. I've tried this salad with tomatoes, onions, and even blue cheese, but I always go back to the classic fixings.
Ingredients
Directions
1. Peel, wash, and slice the cucumbers. I like to have some thin slices and some thicker ones; if you like the salad to remain crunchy I would slice the cumber a little thicker. Move the cumbers to a bowl and sprinkle with salt and place in fridge; wait 30-45 minutes then drain bowl. This step will pull water out of the cucumbers, and allow for a more flavorful salad.
2. Add remaining ingredients, mix well, and refrigerate until you are ready to serve. I usually use 1/4 cup of sugar when I make this, and play with the vinegar until it is perfectly tangy. I also feel like this salad is better on day 2 and 3 then day 1.

ReplyDeleteMy parents always make a similar salad in the summer months. I love the crunch of the cucumber and I can only imagine how delicious it would taste with bleu cheese! Mmm.
ReplyDeleteI do too! I normally will slice the cucumber a little thicker and add a little more vinegar to keep them crunchy longer!

My grandma's recipe is very similar to this one, but I think she mixes a little oil with the vinegar. This kind of salad is addicting!
