The Best Venison Burger Around

As many of you know, we love us some Venison.  It graces our plates about once a week, and I consistently have my eyes open for new recipes.  Which is how I found this little jewel - Bacon Venison Burgers.  And holiness they are good.

For those who have cooked with Venison you know it is super lean, which makes it very hard to pull off a good hamburger.  But the little addition of bacon to these made them so moist and just amazing!  Ugh, I hate the word moist. I derail.  Pick yourself up some Venison  host a cookout and wait for the praises to roll with these puppies.


Ingredients

6 slices bacon, minced
2 tablespoons olive oil
1 teaspoon minced garlic
2 shallots, minced
2 lbs ground venison

1 Tbl Worcestershire
1 Tbl Chopped Fresh Parsley
Salt and Paper to Taste
1 Egg, beaten to mix
6 Hamburger buns
Steps

1.    Cook bacon in a skillet over medium heat until browned and crispy. Pour bacon and grease into a heatproof bowl and allow to cool. Heat olive oil in skillet then add garlic and shallots. Cook and stir until softened, about 3 minutes; then add to bacon.


2.    Once cool, mix in venison, Worcestershire sauce, parsley, salt, pepper, and egg until evenly combined. Refrigerate for 20 minutes.

3.    Preheat an outdoor grill for medium-high heat.
4.   Shape the mixture into 6 patties and grill to desired doneness. Serve on toasted hamburger buns with your favorite toppings.

  1. We made these last night with antelope and beef mixed and they were amazing!! Thank you for the recipe! I love that they did not have breadcrumbs either! Normally I add them but my son is not gluten-free so this was a perfect recipe!! Blessings!

  5. Add crumbled blue cheese,some chopped pineapple and slivered portebello mushrooms that burger is gone like the wind.

  6. I made these last night, I am not a venison fan or at least not until now. My son started hunting last year and I am trying to support him. These burgers were amazing! Everyone loved them. Its a keeper for sure!
