Spring Up Your Salad

Spring is one of my favorite times in Texas.  The sun is gentle, and feels perfect on skin that's been covered all Winter.  The breeze still has a hint of crisp coolness, and moves the beautiful Texas wildflowers that cover the roadsides with a sweetness summer chases away.  And all of that is accompanied by the fresh fruit and veggies that begin to fill trees and gardens across the state.  With that in mind, I'm sharing a simply amazing Spring Salad my favorite sister-in-law made at a recent sibling dinner.  The ingredients are wonderful on their own, but together they pop.  LET ME KNOW WHAT YOU THINK!

  • Baby Spinach
  • Fresh Strawberries
  • Avocado
  • Blue Cheese Crumbles
  • Brianna's Poppy Seed Dressing
  • Sliced Almonds

This salad is very simple to assemble --- Pile a bed a baby spinach in a wide set bowl, and layer with sliced strawberries, avocado, blue cheese crumbles, almonds and a splash of Poppy Seed Dressing. 

If you don't like strawberries, mix in blueberries or mandarin oranges.  The dressing is also sinful over fresh peaches.
