Pumpkin Pie and Deer Stands


One more thing can be checked off our Fall Bucket List --- Last night, I made my very first homemade pumpkin pie!  The proof is below – And yes, this Vaughan can make a kicking pumpkin pie.

Ingredients:
-          A pie Pumpkin (15 oz. of purred pumpkin needed)
-          ¾ Cup Sugar
-          ½ tsp. Salt
-          ½ tsp. Ginger
-          ¼ tsp. Cloves
-          ½ tsp. All Spice
-          ½ tsp. Cinnamon
-          1 tbsp. Vanilla
-          2 Eggs
-          10 Oz. Evaporated milk

Step 1:  Cut the Pie Pumpkin and Clean out it’s guts.
This was the hardest part – I had no idea how incredibly hard these little guys are!  I got it cut, but by the end Tanner had to help me and we dirtied every knife in our kitchen. Some of the tips I read before I started said to use a hand saw – They were right!

 










Step 2: After the pumpkin halves have been cleaned, place them on a cookie sheet and bake for 45 minute at 350 degrees.  The cooking time varied between different recipes – but a good rule of thumb is,  if the pumpkin is soft, you’re done. 



Step 3: Scoop out the pumpkin and puree.  I was so shocked at how incredible the pumpkin smelled and how sweet it was!  Everyone who knows me understands what a refined sweet tooth I have – And even I was surprised that it was THAT sweet.



Step 4: Mix and Bake
Mix Sugar, Salt and Spices together.  Stir in eggs, vanilla, and pumpkin. My pumpkin made exactly 15 oz. of puree – some recipes call for more pumpkin in which case, two pie pumpkins would be needed.  Finally, gradually mix in evaporated milk, and pour into 9 inch, deep pie crust.


Step 5: Preheat oven to 425 degrees for 15 minutes, then decrease to 350 degrees.  Place Pie on cookie sheet and bake for 45 – 50 minutes.

Step 6: ENJOY - I had such a great time making this treat and TV enjoyed the results!



Happy to have done one more thing on our Fall Bucket list – What will I do this weekend?  DEER HUNTING!  This weather is too good not to be in a deer stand, so we are off to South Texas to see what we can find.  Looking forward to a weekend of hunting, four-wheeling, and lots of food.  Wish me luck!
